Method

  1. Slice the onions.
  2. Slice the potatoes about 1cm thick.
  3. Beat the eggs with salt and let it rest.
  4. Fry the onions and potatoes with salt in olive oil until they after soft and slightly charred.
  5. Pour the onions and potatoes into the eggs and let the soak for a few minutes.
  6. Pour the mixture into a pan. Check frequently.
  7. Make the aioli; make a garlic paste, mix in with the mayonnaise, a squeeze of lemon and salt.
  8. Flip the omlette using a plate.
  9. Serve with a kale salad.
