Butternut squash, garlic, spinach, halloumi, tahini

Method

  1. Peel and chunk the butternut squash, toss in olive oil, salt and pepper.
  2. Roast the squash for about 40 minutes at 200°C.
  3. Just before the squash is done, fry the sliced garlic and spinach. Then do the halloumi.
  4. Serve up with tahini drizzled over everything.
